Jamaican food is actually a mixture of culinary traditions from Africa, India, Spain, China and Britain with strong presence of such spices as garlic, ginger, nutmeg and peppers. The curry dishes are among the most favorite Jamaican dishes and are greatly influenced by spicy preparations from East India. Other than curry, dishes like callaloo, cod and ackee, jerk and breadfruit dishes are also very popular among patrons of Jamaican dishes. Cod and ackee is made from codfish and a fruit named ackee. The pulp of the fruit is extracted and is cooked with codfish and other seasonings. It is known that the fruit ackee does not taste sweet and looks like scrambled eggs during cooking. The preparation is popular as a breakfast dish and is regarded as one of the national dishes of Jamaica. It is usually served with plantains, dumplings or breadfruit.

Breadfruit is another staple Jamaican food. It originally owed its popularity to its low cost, but has now become an indispensable part of Jamaican food. It can be roasted, boiled or fried, according to one’s preference and is treated either as a main dish on a vegetarian menu or as a side dish. The same goes for Callaloo which is prepared from a vegetable belonging to spinach family, although tasting milder than spinach.

Jerk dishes which are seasoned with spices like peppers, cinnamon, allspice, nutmeg, garlic, cloves, scallions and thyme, are no less popular. The jerk seasoning is normally used to season pork, chicken, fish, shrimp, sausage, tofu and beef.
